Mini Protein Pumpkin Pie

It’s fall, so you know what that means? Pumpkin pie! If you are craving all the fall spices and desserts, this protein pumpkin pie might just satisfy your appetite.

The one benefit of this recipe is that it guides you through how to make mini pumpkin pies, so you don’t have to stare longingly, drooling over the ginormous pumpkin pie at Costco, you can make your own personal-size pie!

A mini protein pumpkin pie is relatively easy to make. The part that takes the longest (and may arguably be the hardest for you) is waiting 2-4 hours for the pie to refrigerate.

You will need to stock up on pumpkin puree, a pie shell, marshmallow dip, greek yogurt, Phormula-1 protein powder, whipped cream, as well as a few other ingredients and spices to make these pumpkin pies.

Mini Protein Pumpkin Pie

Servings: 1
Prep Time: 5 Minutes
Fridge Time: 2-4 Hours

Ingredients

  • 3 Tbsp of Organic Pumpkin Puree
  • 1 Mini Graham Pie Shell
  • 1 Tbsp of Walden Farms Marshmallow Dip
  • 1 Tsp of Cinnamon
  • 2 Tbsp of Vanilla Greek Yogurt
  • 1 Tsp of Honey
  • 1 Tsp of Pumpkin Pie Spice
  • 1/2 Scoop of Phormula-1 CTC

Directions:

1. In a small mixing bowl, mix all the ingredients together until fully combined.

2. Use this mixture to fill the pie shell.

3. Cover the pie with plastic wrap or in and airtight container and refrigerate 2-4 hours to allow it to firm and flavors to marry.

4. Just before serving, top with dollop of whip cream or more cinnamon if you'd like (just know these aren't calculated in the macros). Enjoy!
