Everyone loves tacos, but sometimes we can get bored with the same old same beef or chicken taco.
This recipe is a perfect twist on tacos and a great addition to your healthy recipe lineup.
Flaky, white fish paired with crunchy coleslaw and a macro-friendly sauce? Count me in! Each bite is full of flavor, color, and essential nutrients.
You can pan fry or grill the fish - whichever method you prefer. Serve with a lime and some pico de Gallo for extra pizazz.
Forget Taco Tuesday, this macro-friendly taco recipe is great for any night of the week.
Baja Fish Tacos
Servings: 4 (1 Serving = 2 Tacos)
Ingredients:
For the Tacos:
• 1 Lbs Lean White Fish (Cod, Halibut, Tilapia, Mahi, Snapper), Fresh or Thawed if Frozen
• 1/4 Tsp Salt
• 1/4 Tsp Cumin
• 3/4 Tsp Tajin
• 2 Cups Tri Colored Coleslaw
• 8 Corn Tortillas
For the Sauce:
• 1/4 Cup Fat Free Greek Yogurt
• 3 Tbsp Light Mayo
• 1 Tbsp Lime Juice
• 3/4 Tsp Tajin
• 1/8 Tsp salt
• 1 Tsp Water to Thin
Directions:
1. Cut the fish into four 4oz pieces. Season and coat each piece with salt, cumin and Tajin on both sides.
2. Heat a medium-sized pan on medium heat and spray with non-stick spray.
3. Place fish on a heated pan and cook for 4-5 minutes on each side until fish is opaque and charred. Set aside.
4. Combine the sauce ingredients in a small bowl until mixed together.
5. Warm the tortillas in a non-stick pan for 30 seconds each side.
6. Assemble tacos. Place 1/4 cup of slaw on the bottom of each tortilla. Top each tortilla with 2oz fish. Drizzle with 1-2 tbsp of sauce and enjoy!
