Chicken Sausage Sheet Pan

Ingredients:
1 Tbsp Extra Virgin Olive Oil
4 Chicken Sausage Links, Sliced About 1/2 Inch Thick
1/3 Cup Diced Red Onion
1 Red Pepper, Chopped
1 Orange Pepper, Chopped
2 Small to Medium Zucchini, Sliced and Quartered
1/2 Tsp Garlic Salt
1/4 Tsp Sea Salt
1/8 Tsp Fresh Cracked Black Pepper
2 Ears of Corn
Salt and Pepper, To Taste
2 Tbsp Basil, Chopped
2 Tbsp Cilantro, Chopped
Basil Cilantro Crema:
1/2 Cup Non-Fat Plain Greek Yogurt
1/4 Cup Low-Fat Cottage Cheese
1/3 Cup Basil, Packed
1/4 Cup Cilantro, Packed
1 Tbsp Extra Virgin Olive Oil
1/2 Tsp Garlic Salt
1/4 Tsp Pepper Juice From Half a Lime
Directions:
For this recipe, you'll need:
• Cutting Board
• Sharp Knife
• Large Mixing Bowl
• Large Sheet Pan
• Parchment Paper or Cooking Spray
• Blender or Food Processor
• Spatula
• Small Bowl or Jar With Lid
1. Preheat the oven to 425°F.
2. Blend the ingredients for the basil cilantro crema in a blender, then set aside. Refrigerate until ready to use.
3. Line your sheet pan with parchment paper or lightly spray with cooking spray.
4. Slice your chicken sausage into 1/2 inch thick coins. Chop the peppers, dice the onions, quarter the zucchini, and cut the corn kernels from the cob.
5. Toss the chicken sausage and cut vegetables in olive oil, garlic salt, salt, and pepper.
6. Spread the mixture on a sheet pan in a single layer.
7. Place sheet pan in the oven and roast for 25-30 minutes, stirring once halfway through. Roast until the vegetables are tender and slightly charred, and the chicken sausage is browned.
8. Once out of the oven, sprinkle basil and cilantro, and drizzle basil cilantro crema over the top.
9. Serve with rice or quinoa and enjoy! You can also serve it alone for a lower-carb option.
