We all get a sweet tooth from time to time. Trust me, it's one of my biggest weaknesses.
Sometimes, all I need is a small bit of something to kick my cravings though. That's when I came up with the idea for some protein-packed bites to keep me tied over.
These cookies & cream protein bites make for a great on-the-go snack, or guilt-free way to get rid of your sweet tooth.
Plus, they are super quick and easy to make for those of us with a busy lifestyle!
Cookies & Cream Energy Bites
Servings: 12 (1 Serving = 1/12 of the Bites)
Prep Time: 10 minutes
Fridge Time: 15 minutes
INGREDIENTS:
1/2 Cup Level-1 Vanilla Ice Cream
1/4 Cup Coconut Flour
3 Tbsp of No Cal Sweetener
6 Tbsp Low Fat Cream Cheese, Softened
4 Oreos, Crushed
4 Tbsp White Chocolate Chips, Melted
DIRECTIONS:
For this recipe, you'll need:
• Baking sheet pan or large plate
• Medium mixing bowl
• Piping bag or ziplock bag
• Refrigerator
1. Combine all ingredients except for the melted chocolate in small bowl until mixed (use your hands). If needed, add 1-3 drops of water to help mix powder into a dough-like consistency.
2. Roll the dough into tablespoon-sized balls and then refrigerate them on a plate or baking sheet for at least 15 minutes.
3. Remove the protein balls from the fridge. Add the melted white chocolate to a ziplock bag or piping bag to drizzle them over the protein balls.
4. Enjoy the cookies & cream protein bites or store them in the fridge for a quick snack to grab throughout the week! They can stay fresh up to 7 days!
