High-Protein Breakfast Casserole

Looking for a high-protein recipe for the family or meal prep? This breakfast casserole has been a staple of mine for quite some time now.

You'll get 25g of protein per serving and can store it in the fridge for breakfast all week long! Plus, it's a super easy recipe to master, and easy to make in just 40 minutes tops!

You can also switch out the veggies, cheese, and meat you use any time you want for some variety.

HIGH-PROTEIN BREAKFAST CASSEROLE

Servings: 6
Prep Time: 10 minutes
Cook Time: 30 minutes

INGREDIENTS:

2 Tbsp of Melted Butter
1 Tsp of Butter
1/2 Small Yellow Onion, Diced
1/2 Medium Bell Pepper, Diced
1 Cup All-Purpose Flour
1 1/2 Tsp Baking Powder
1/2 Tsp Salt
1 Cup Milk
6 Large Eggs
1 Cup Shredded Cheddar Cheese
10 Oz Diced Ham
Non-Stick Cooking Spray
Salt and Pepper To Taste

DIRECTIONS:

For this recipe, you'll need a:

• Small baking dish (8x8x2 or 11x7x2 work great)
• Skillet pan
• Medium mixing bowl
• Whisk
• Conventional oven
• Stovetop

1. Preheat the oven to 375℉ and lightly coat the baking dish with a non-stick cooking spray.

2. Place the skillet over a medium heat on the stove and add 1 tsp of butter.

3. Once the butter is melted, add the diced onion and bell pepper. Cook them until they are tender and set them aside.

4. In a medium-sized mixing bowl, whisk the flour, baking powder, salt, 1/2 cup of milk, 1 egg, and 2 tbsp of melted butter until smooth. Sprinkle 3/4 cup of the shredded cheddar cheese over the mixture.

5. In the same bowl, whisk together the remaining 5 eggs and 1/2 cup of milk until smooth. Once done, add the peppers, onions, and diced ham to the bowl and mix until fully combined.

6. Pour mixture into the baking dish and sprinkle the remaining 1/4 cup of cheddar cheese over the top.

7. Place the baking dish in the oven to bake for 30-35 minutes or until a toothpick or fork comes out clean when you pierce it.

8. Let the casserole cool for 5 minutes before cutting it into 6 evenly-sized pieces. Then, enjoy or save each portion for later in the fridge! The casserole can be good for up to 5-6 days.
