Macro-Friendly Breakfast Pockets
Servings: 8 (1 Serving = 1 Pocket)
Prep Time: 15 minutes
Cook Time: 10-12 minutes
INGREDIENTS:
15 Slices Canadian Bacon, Diced
6 Eggs (Whisked)
1/2 Cup Egg Whites
3 Cups Self-Rising Flour
3 Cups Fat-Free Plain Greek Yogurt
2 Tsp Garlic Powder
2 Tsp Onion Powder
2 Tsp Black Pepper
1 Tsp Salt
1 Cup Low Fat Shredded Cheddar Cheese
8 Chives, Chopped
Non-Stick Cooking Spray
DIRECTIONS:
For this recipe, you'll need:
• 1 medium skillet pan
• 1 large skillet pan
• Large bowl
• Stovetop
• Whisk (for the eggs)
• Parchment paper
1. In a medium skillet over medium heat, cook Canadian bacon until crispy. Remove the bacon from the pan and set aside.
2. In the same pan, cook the eggs and egg whites on low to medium heat. Mix them gently until cooked through. Season with salt and pepper to taste and set aside.
3. In a large bowl, mix the flour, greek yogurt, and spices together to form a dough. Knead the dough into 8 evenly-sized balls and set them aside on a non-stick surface (such as parchment paper).
4. Flatten each ball into a circle, making them as thin as possible.
5. Sprinkle each of the dough circles with about 1/8 cup of cheese and evenly distribute the bacon, eggs and chives amongst them. Make sure all the ingredients are in the middle of the dough circles.
6. Pinch all the sides of the dough to the middle to seal them. Flip each of them over and gently flatten them.
7. Once they are all sealed, lightly coat a large pan with non-stick cooking spray and bring it to a medium heat.
8. Place each of the breakfast pockets in the pan, cooking each side for 5-6 minutes. If you can't cook all of them at once, no worries! You can always do this in batches.
9. Remove the breakfast pockets from the pan to serve or wrap them in foil to refrigerate or freeze for later!
