Sheet Pan Tacos

This one-pan wonder is perfect to add to your arsenal for meal prep or a quick and simple dinner!

Sheet pan dinners are easy to prepare and are full of nutrient-dense options. This fun twist on tacos is made with simple, everyday ingredients that you may already have at home.

Just combine your favorite taco seasoning, chicken breast, and roasted veggies! The result will be a dish that you'll fall in love with.

Sheet Pan Tacos

Servings: 8 (1 Serving = 1 Taco)


• 3 Large Chicken Breasts (About 2lbs)
• 1 Red Bell Pepper
• 1 Yellow Bell Pepper
• 1 Green Bell Pepper
• 1 Red Onion
• 2 Tbsp Olive Oil
• 1 Packet of Taco or Fajita Seasoning
• 8 (8-Inch) Tortillas

Optional Toppings:

• Cheese
• Sour Cream
• Plain Greek Yogurt
• Shredded Lettuce
• Pico de Gallo


1. Preheat the oven to 400℉ and spray a baking sheet with cooking spray.

2. While the oven preheats, cut the chicken breasts into 1x1 inch cubes.

3. Next, thinly slice the peppers and onions.

4. Combine the peppers, onions, chicken, olive oil and taco seasoning in a large bowl. Toss until the veggies and chicken are evenly coated.

5. Spread the peppers, onions, and chicken onto the baking sheet and place in the oven to bake for 20-25 minutes, or until the chicken is cooked to an internal temperature of 165℉.

6. Halfway through the bake time, remove the baking sheet to mix the veggies and chicken to ensure an even bake. Wrap the tortillas in foil and place in the oven for the final 5 minutes to warm them up.

7. Remove the ingredients from the oven and divide the chicken and veggies evenly between all 8 tortillas. Add any additional toppings you'd like and enjoy!
