High-Protein Chicken Parmesan
Servings: 6 (1 Serving = 1/6 of Recipe)

INGREDIENTS:
2 Lbs Chicken Breast, Uncooked
1 (24oz) Jar Marinara Sauce
1/2 Cup Shredded Parmesan Cheese
1 1/2 Cup Low-Fat Shredded Mozzarella Cheese
1 Cup Panko or Gluten-Free Bread Crumbs
1 Tbsp Olive Oil
1 Tbsp Dried Parsley
Salt and Pepper, to Taste
DIRECTIONS:
For this recipe, you'll need:
• 8x8" Baking Dish
• Spatula or Spoon
• Medium Mixing Bowl
• Mixing Spoon
• Large Pan
• Meat Thermometer
1. Preheat the oven to 350℉ . Lightly spray an 8x8" baking dish with cooking spray.
2. While the oven is preheating, coat a large pan with cooking spray and put it over medium-high heat.
3. Add the chicken breast to the pan, letting it cook on one side for 5-7 minutes. Next, flip the chicken breast to cook on the other side for another 5-7 minutes.
4. Reduce the heat on the pan to medium and flip the chicken again to finish cooking. The chicken should reach an internal temperature of 165℉. Remove the chicken from the pan and set aside in a large bowl.
5. With a fork, shred the chicken.
6. Once the oven is preheated, layer the fully cooked chicken in the bottom of the baking dish and add marinara on top. Spread the marinara with a spatula or spoon to evenly coat the chicken.
7. Top the mixture with parmesan and mozzarella.
8. In a medium bowl, stir together breadcrumbs, olive oil, parsley, and salt and pepper to taste.
9. Evenly distribute the mixture on top of the parmesan and mozzarella.
10. Place the dish in the oven for 20-25 minutes. If you want it more crispy, turn on the broiler for one minute!
11. Remove the dish from the oven and allow the chicken to cool by itself or serve over cooked pasta of choice!
