Traditionally served with beef, this chicken stroganoff cuts down on quite a bit of the fat content. It's a fun twist on classic stroganoff that you and the family are sure to love! Everyone will surely be asking for seconds.
This tasty dish also makes an excellent meal prep option. This is especially true when you want a warm meal to enjoy while staying on track with your nutrition.

High-Protein Chicken Stroganoff
Servings: 4 (1 Serving = 1/4 of Recipe)
Prep Time: 10 Minutes
Cook Time: 45 Minutes
INGREDIENTS:
1 Lb 93% Ground Chicken
1/2 Cup Low-Fat Sour Cream
2 Tbsp All Purpose Flour
1/2 Cup Onion, Chopped
8 Oz Mushrooms, Sliced
8 Wt Oz Egg Noodles
1 Cup Water
1 Tbsp Tomato Paste
1 Tsp Chicken Bouillon
1 Tsp Worcestershire Sauce
1/2 Tsp Paprika
1/2 Tsp Thyme
1/4 Tsp Salt
Black Pepper, To Taste
DIRECTIONS:
For this recipe, you'll need:
• Large Mixing Bowl
• Large Saucepan
• Non-Stick Cooking Spray
• Cutting Board
• Knife
• Mixing Spoon
• Medium Pot
1. Using a cutting board and knife, chop the onions and slice the mushrooms. Set them to the side separate from each other.
2. Combine the water, sour cream, flour, bouillon, and paprika in a large mixing bowl and mix until you get a smooth, sauce-like consistency. Set the sauce to the side.
3. Heat a large saucepan on high heat and coat it with non-stick cooking spray. Add the ground chicken and salt then heat until fully cooked (no pink).
4. Once the ground chicken is cooked, reduce the heat to medium. Next, add the onions and tomato paste. Stir until onions are tender and translucent.
5. Add the mushrooms, thyme, and Worcestershire sauce to the mix.
6. Pour the sauce over the ground chicken and stir until everything is mixed together. Bring the mixture to a low boil. Cook on low for 35-45 minutes, stirring every 5 to 10 minutes. As this is cooking, cook your egg noodles according to the directions on the package.
7. Once cooked, serve the stroganoff over the egg noodles Enjoy!
