Protein-Packed Mini Meatloaf Recipe

PROTEIN-PACKED MINI MEATLOAVES

Servings: 9 (1 Serving = 1 Mini Meatloaf)
Prep Time: 10 Minutes
Cook Time: 35 Minutes 

INGREDIENTS: 

20 Oz Ground 96% Lean Beef, Raw
1/2 Cup Yellow Onion, Chopped
2 Cloves Garlic, Minced
1 Large Egg
1 Tablespoon Worcestershire Sauce
1/4 Cup Chicken Stock
1 Tablespoon Tomato Paste
1 Cup Bread Crumbs
1 Teaspoon Salt
1 Teaspoon Black Pepper

TOPPING: 

1/2 Cup Sugar-Free Ketchup
1 Teaspoon Italian Seasoning

DIRECTIONS:

For this recipe, you'll need:

• Large Mixing Bowl
• Sharp Knife
• 9-Cup Muffin Pan/Tin
• Non-Stick Cooking Spray
• Ice Cream Scooper (Optional)

1. Preheat your oven to 350°F.

2. Begin by finely chopping your onion into small, uniform cubes. (The smaller the pieces, the better they'll incorporate into the meat mixture.)

3. In your large mixing bowl, combine all ingredients: ground beef, chopped onion, minced garlic, egg, Worcestershire sauce, chicken stock, tomato paste, bread crumbs, salt, and pepper. Mix everything with your hands until well combined (Wash your hands beforehand and try not to overmix).

4. Spray your muffin pan generously with non-stick cooking spray. This will make removal much easier later!

5. Divide your meat mixture evenly between the 9 muffin cups. Pro Tip: You can use an ice cream scooper for even portions.

6. Place the meatloaves in the oven to bake for 35 Minutes, or until the internal temperature reaches 160°F.

7. Once done, let them cool for 2-3 Minutes. Next, top each mini meatloaf with a dollop of sugar-free ketchup and a sprinkle of Italian seasoning.
