Protein-Packed Jalapeño Popper Burrito

Servings: 4 (1 Serving = 1/2 Burrito)
Prep Time: 10 Minutes
Cook Time: 15 Minutes

Ingredients:

2 Large Flour Tortillas
12 Ounces Boneless, Skinless Chicken Breast
1 Packet Ranch Seasoning Mix (Use Half at a Time)
1/2 Cup Plain Nonfat Greek Yogurt
2 Laughing Cow Cheese Wedges
2 Fresh Jalapeños
1/4 Cup Shredded Cheese (Mexican Blend or Cheddar)
1/4 Cup Shredded Lettuce
1/4 Cup Pico de Gallo
1/4 Cup Canned Black Beans, Drained and Rinsed

Directions:

For this recipe, you'll need:

• Air Fryer
• Skillet or Pan
• Mixing Bowl
• Knife
• Cutting Board

1. Season the chicken with half of the ranch seasoning packet and air fry at 400°F for 10 minutes.

2. Remove the chicken from air fryer and set aside. Add whole jalapeños to the air fryer and cook at 400°F for 5 minutes.

3. Remove the jalapeños and let them cool slightly. De-seed and dice the cooked jalapeños. Finely chop the cooked chicken.

4. In a mixing bowl, combine the Greek yogurt, Laughing Cow cheese wedges, diced jalapeños, remaining ranch seasoning, and chopped chicken. Mix until well combined.

5. To each tortilla, add half of the chicken mixture, half of the shredded cheese, half of the lettuce, half of the pico de gallo, and half of the black beans. Wrap tightly into a burrito.

6. Place the burritos seam-side down in a skillet over medium heat and cook until golden brown on both sides.

7. Slice each burrito in half and enjoy warm.
