Ingredients:

For the Chicken: 

2 Lbs Boneless, Skinless Chicken Breast
1 Tsp Italian Seasoning
1/2 Tsp Garlic Powder
2 Cups Marinara Sauce
2 Tbsp Grated Parmesan Cheese
1/2 Cup Reduced-Fat Mozzarella Cheese

For the Topping: 

2 Cups Low-Fat Cottage Cheese (Blend Until Smooth for Ricotta-Like Texture)
1/4 Cup Grated Parmesan Cheese
1 Large Egg
2 Tbsp Parsley
1/4 Tsp Salt
1/4 Tsp Pepper

Directions:

For this recipe, you'll need:

• Mixing Bowl
• 9x13 Baking Dish
• Blender/Food Processor
• Non-Stick Cooking Spray

1. Preheat the oven to 375°F. Coat a 9x13 baking dish with non-stick spray.

2. Place the chicken breasts in the baking dish and sprinkle with Italian seasoning and garlic powder.

3. Spread marinara sauce evenly over the chicken.

4. Blend cottage cheese until smooth in a food processor or blender. In a mixing bowl, combine the blended cottage cheese with parmesan, egg, parsley, salt, and pepper.

5. Spread the cottage cheese mixture over the chicken and sauce. Sprinkle mozzarella and extra parmesan on top.

6. Bake uncovered for 35-45 minutes, until chicken is cooked through (165°F internal temperature) and cheese is golden on top.

7. Let it sit for 5 minutes before serving or dividing between meal prep containers.
