High-Protein Chili Mac
Servings: 8 (1 Serving = 2 Cups)
Prep Time: 30 Minutes
Cook Time: 5 Minutes
INGREDIENTS:
1 (8oz) Box or 2 Cups of Dry Elbow Protein Pasta
1 Lb 93% Lean Ground Turkey
1 Large Onion, Chopped
1 Bell Pepper, Chopped
1 Cloves of Garlic, Chopped or 1 Tsp Minced Garlic
1 Jalapeño, Seeded and Chopped
1/8 Tsp Salt
2 Tbsp Chili Powder
1 Tsp Ground Cumin
2 Cans (14.5oz) Diced Tomatoes
1 Can (15oz) Kidney Beans, Drained and Rinsed
1 Cup Fat-Free Shredded Cheddar Cheese
1 Bunch of Green Onions, Chopped (Optional)
DIRECTIONS:
For this recipe, you'll need:
• Medium Pot
• Non-Stick Cooking Spray
• Large Pot
• 3 Quart Casserole Dish
• Strainer
1. Preheat oven to 350℉.
2. Cook the pasta in a medium pot according to the directions on the package. Drain the noodles and set aside.
3. Spray a large pot with non-stick cooking spray and place it on the stove over medium heat.
4. Add the turkey, onion, and bell pepper. Cook until the meat is browned and the vegetables are soft.
5. Add garlic and jalapeños to the pot and cook for another 2 to 3 minutes.
6. Mix in the spices - salt, chili powder, and cumin. Stir until well combined.
7. Add tomatoes and beans before increasing the heat to medium-high. Let the pot simmer for 15 minutes, stirring occasionally.
8. Add the cooked pasta and 1/2 of the cheddar cheese. Stir until well combined.
9. Spray the casserole dish with non-stick spray. Pour the pasta into the casserole dish and top it with the rest of the cheese.
10. Put the dish in the oven to bake for 5 minutes.
11. Take the pasta out of the oven and top it with green onions if desired. Let it cool and enjoy!
