MEDITERRANEAN MEAL PREP BOWLS
Servings: 4 (1 Serving = 1/4 of Recipe)
Prep Time: 10 Minutes
Cook Time: 15 Minutes
INGREDIENTS:
12 Oz Chicken Sausage
1 Cup Couscous, Uncooked
1/2 Large English Cucumber
2 Cups Cherry Tomatoes
1/4 Cup Red Onion
1/2 Cup Feta Cheese, Fat Free
1 Tbsp Red Wine Vinegar
1 Tbsp Olive Oil
1 Tbsp Lemon Juice
SAUCE:
1 Cup Plain Non-Fat Greek Yogurt
1/2 English Cucumber
1 Tsp Lemon Juice
1 Tsp Minced Garlic
Salt and Pepper, To Taste
DIRECTIONS:
For this recipe, you'll need:
• Large Skillet
• Non-Stick Cooking Spray
• Saucepan
• Knife
• Cutting Board
• Large Bowl
• Small Bowl
• Spoon
• 4 Meal Prep Containers
1. On a cutting board, halve the tomatoes, and dice the cucumber and onion. Next, slice the chicken sausage into thin rounds. Set the vegetables and chicken sausage separate from each other on the side. Make sure to separate half of the cucumber from the other half.
2. In a saucepan, start cooking the couscous according to the directions on the package.
3. Heat a large skillet over medium heat and coat it with non-stick cooking spray. Add the sliced sausages to the skillet and cook until lightly browned. Set aside and let the sausage cool.
4. In a large bowl, toss the veggies and feta cheese together. Remember to save half of the diced cucumber for the sauce later.
5. In a small bowl, stir together the vinegar, oil and lemon juice. Pour the liquid mixture over the veggies and toss to combine.
6. In your smaller bowl, mix the sauce ingredients until well combined.
7. Finally, fill each meal prep container with an equal amount of couscous, veggies, sauce, and sausage. Store in the fridge and reheat to serve up throughout the week!
