High-Protein Salad in a Jar 

Servings: 2 Jars (1 Jar = 1 Serving)
Prep Time: 30 Minutes

Ingredients:

Dressing:

1/4 Cup Plain Nonfat Greek Yogurt
1 Tsp Dijon Mustard
1 Tbsp Lemon Juice
1/4 Tsp Salt
1/4 Tsp Black Pepper

Veggies:

1 Cup Cherry Tomatoes, Halved
1 Cup Cucumber, Chopped
1/2 Cup Shredded Carrots
3 Cups Mixed Greens

Protein:

1 Cup Pre-Cooked Chicken Breast, Cubed or Sliced
4 Tbsp Crumbled Feta Cheese

Directions:

For this recipe, you'll need:

  • 2 (16 Oz) Mason Jars or Other Sealable Jars
  • Knife
  • Cutting Board
  • Measuring Cups
  • Measuring Spoons
  • Small Mixing Bowl
  • Whisk
  • Spoon

1. In a small mixing bowl, add Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper. Whisk until smooth and fully combined.

2. Halve the cherry tomatoes, chop the cucumber into bite-sized pieces, and measure out the shredded carrots and mixed greens.

Assemble the Jars (Per Jar):

3. Add 2 Tbsp dressing to the bottom of each jar. 

4. Layer 1/2 Cup cherry tomatoes, 1/2 Cup cucumber, and 1/4 Cup shredded carrots.

5. Add 1/2 Cup pre-cooked chicken.

6. Sprinkle with 2 Tbsp crumbled feta cheese.

7. Top with 1 - 1 1/2 Cups mixed greens.

Store: Seal jars tightly and refrigerate for up to 3 to 4 days. Shake well before eating to evenly distribute the dressing.
