1 Cup Liquid Egg Whites
1 Whole Egg
1 Cup Diced Potatoes
1 Cup Bell Peppers + Onions, Diced
1 Tsp Garlic Powder
1 Tsp Taco Seasoning
1/2 Tsp Salt & Pepper
4 High Fiber Tortillas
1/2 Cup Reduced-Fat Shredded Cheddar

Chopped Cilantro
Directions:
For this recipe, you'll need:
• 2 Medium Skillets
• Cutting Board
• Chef's Knife
• Measuring Cups & Spoons
• Mixing Spoon or Spatula
• Mixing Bowl
• Baking Sheet or Plate
• Foil or Parchment Paper
• Non-Stick Cooking Spray
1. Dice the potatoes, bell peppers, and onions. Set them aside.
2. Crack eggs into a mixing bowl, adding in the egg whites afterward. Whisk them together until combined.
3. Coat a skillet with non-stick cooking spray. Add the diced potatoes, season with salt and pepper, and cook over medium heat until tender and lightly golden (about 8-10 minutes). Remove from the skillet and set aside.
4. In the same skillet, add lean ground beef. Season with garlic powder, taco seasoning, salt, and pepper. Cook over medium heat until browned and fully cooked. Drain any excess fat if necessary.
5. Add bell peppers and onions to the skillet with the beef. Cook until softened, about 3-4 minutes.
6. Add the cooked potatoes back into the skillet and mix everything together.
7. Push the mixture to one side of the skillet. Pour in the egg mixture and scramble until fully set. Mix the eggs evenly into the beef and potato mixture.
8. Lay out the tortillas and divide the filling evenly among them. Sprinkle each with reduced-fat cheese and roll them up tightly.
9. Heat a clean skillet over medium heat and sear each burrito seam-side down for 1-2 minutes per side for a golden crust (optional).
10. Serve with salsa, hot sauce, or chopped cilantro as desired.
11. Wrap burritos in foil or parchment paper for storage. Store in fridge for up to 4 days or freeze for up to 3 months. Reheat them in the microwave or oven when you're ready to enjoy!
